(serves 6-8)
Ingredients
6 large red potatoes,
1 Tablespoon Olive oil, 2/3 cup Chili sauce,
1 Tablespoon Chili
powder, 1 Tablespoon
Paprika, 1 Tablespoon Cumin, 1/4 to
1/2 teaspoon red pepper flakes, 3 large garlic
cloves, 1/3 cup chives or green onion - finely chopped for
garnish.
Directions:
Preheat oven to 450
degrees. Put all ingredients except garnish into
mini blender and whirl just until blended. Set
aside. Wash potatoes thoroughly. Do not
peel. Cut lengthwise into 6-8 equal wedges.
Cook in lightly salted water until slightly tender, but
not quite done. Drain. Place potatoes in
large bowl. Cover with sauce and gently toss,
taking care not to break the potato wedges. Be
certain
all the wedges are well coated, then
spread the wedges evenly on a
sheet pan. Place the pan in the center
of preheated oven for 12-15 minutes. Remove to large serving
dish and top with garnish of your
choice.
