Cajun Crab Stuffing (serves 10-12)

Ingredients

1&1/2 pounds Dungeness crab meat, 1&1/2 pounds smoked mussels (chopped), 8-10 cups dry cornbread cubes, 8-10 cups dry sourdough bread cubes, 2-cups chopped celery, 2-cups chopped onions, 1/2-cup chopped parsley, 4-Tablespoons butter, 4 Tablespoons poultry seasoning, 4-Tablespoons Cajun's Choice Blackened Seasoning, 4-ounce can ortega green chilies (diced), 1 chopped red bell pepper, 3-4  cups chicken stock. 

Directions:

Saute celery, onion and red bell pepper in two tablespoons butter until slightly tender, but not brown.  allow above ingredients to cool.  Combine these ingredients in a large bowl with bread cubes, parsley, chilies and seasonings.  Add enough chicken stock to moisten.  Add crab meat and shopped mussels and toss.  Allow stuffing to rest at room temperature for 10 minutes.  Afterwards, taste stuffing and add additional seasonings or chicken stock as needed.  

Place stuffing in lightly buttered large casserole dish and dot with remaining butter.  Bake uncovered in a pre-heated 375 degree oven for 35-40 minutes or until top is lightly browned.  Stuff your holiday turkey with one each medium pear, onion and orange cut into quarters.  Add the leaves from one bunch of celery, several sprigs of parsley and one large sprig of rosemary or sage.  

Stuffing the turkey with fruit and herbs adds a wonderful flavor and cooking time is reduced.
