Hearty Cod  Soup

Ingredients

1.5 to 2 pounds Alaska Cod, bone and skin removed and cut into bite-sized pieces; 3 ribs celery - sliced on the bias; 4 strips lean bacon (chopped); 1/2 onion (chopped); 3 Tblsp parsley (minced); 1lb. corn (frozen, whole kernel); 5-6 cups red potato (skin on, cut into bite-sized pieces and steamed until cooked); 2-quarts milk or half-and-half; 1/2-tsp thyme, salt & pepper to taste, pinch of cayenne pepper

Directions:

In a large saute pan, cook chopped bacon over medium heat until just slightly crisp.  Drain off the majority of fat and add the celery, onion, parsley and thyme and gently saute' until the vegetables are translucent and limp. 

In a large heavy-bottomed pot or kettle, combine vegetable & bacon mixture with 2 quarts (or half-and-half), cooked potatoes and corn.  Bring to a gentle simmer over medium heat, stirring occasionally.  Add cod and continue to simmer for 8-10 minutes.

Although this rich, hearty soup is wonderful the moment it is finished, it tastes even better when allowed to rest.  Let it cool, then refrigerate overnight for best results.
