Seafood Steward's Ketchican Krab Pizza
(Serves 4)
Ingredients
1 lb. *Surimi (imitation
crab meat), 1/2-cup mayonnaise, 1 medium red bell
pepper (diced), 8-oz. shredded mozzarella cheese,
8-oz. shredded sharp cheddar cheese, 6
chopped green onions, 4-Tbspns. shredded parmesan cheese, 3-Tbspns
fresh chopped parsley, 3-Tbspns. fresh lemon juice, 2-Tbspns. finely minced fresh
garlic.
Directions:
Combine ingredients, adding
mayonnaise
last, then
mix well. Spread a thick layer (1/2 inch) on
English muffin halves. Place on sheet pan in
preheated 425-450 degree oven. Bake until
top bubbles and browns. To make a larger
pizza, use a loaf of French bread cut length-wise or "Boboli"
bread.
You may add a bit
more mayonnaise and serve chilled as a stuffing
for a tomato or avocado half. Hot or cold is equally
delicious.
