Seafood Steward's

Kona Catfish (serves 4-6)

Ingredients:

2 lbs (approx.) Catfish fillets, 1/3 cup white vermouth or dry sherry, 1/3 cup soy sauce, 1/3 cup pineapple juice, 2 chopped green onions, 2 Tbsp brown sugar, 1 Tbsp vegetable oil, 1 Tbsp fresh minced garlic, 1 Tbsp fresh ginger (grated), 1 tspn sesame oil

Directions:

Combine all ingredients and marinate fillets for at least 1 hour. (Can be marinated overnight)  Fillets can then be breaded & *sauteed, *broiled or baked for 12-14 minutes in pre-heated 400 degree oven.

* Cook fish approximately 10-minutes per inch of thickness.
