Seafood Steward's Leftover Fish Sandwich Ingredients: Leftover Fish (grilled salmon, halibut, etc.), Toasted Croissant (one per sandwich), Herb Mayonnaise (see directions below), Red leaf lettuce or your favorite lettuce, sprouts, etc. Directions: Cut the croissants in half and toast. Spread the herb mayonnaise on each half of the croissant. Add the lettuce and your leftover fish and you're in business! Herb Mayonnaise Ingredients: 1 Cup mayonnaise, 1 Tablespoon lime juice, 1 Tablespoon dill weed, 2 Tablespoons each of fresh parsley, basil and chives (finely minced), dash of tobasco, coarse ground black pepper to taste (no salt) Directions: Finely mince the parsely, basil and chives, then blend with the lime juice, mayonnaise, tobasco and black pepper. Mix well and refrigerate. NOTE: You can add capers to this mixture to transform it into a unique tartar sauce for any seafood. Return to SFS Main Recipe Archive
