Do you know what to look for when you buy seafood? Does frozen taste as good as fresh? And how do you keep that fish from sticking to the grill? To find out the answers to these and other questions, check out our "seafood tips" section to get the most from your seafood purchase. You can view some of these tips in a streaming video format
called Vivo. But to do so, you will need to download the Vivo Active plug-in. This download is free
from Vivo Software, Inc., and instructions and system requirements are available
on their site. Vivo is currently the most widely used streaming video player
on the internet. It may take a few minutes to download, but it's worth it
to see our video tips! This week's tips: 1. To eliminate fish odor, cook fish using a little white vermouth. The vermouth prevents the oils in fish from bonding with oxygen molecules, which normally rise into the air as steam. This elimination of fish oil from rising steam results in a reduction or total elimination of odor. 2. To prevent fish from sticking on the grill, start with a clean, hot grill. Take one large potato and cut it in half length-wise. Slowly rub the cut portion of the potato on the entire grill surface (be careful, it's hot!). The starches from the potato adhere to the grill creating a natural non-stick coating. Repeat this process each time you cook fish on the grill . 3. When sautéing fish, start with the skin-side up. This keeps the fish moist, even if you happen to overcook it a little. It also leaves the presentation side up once you turn the fish.
