To prevent fish from sticking on the grill, first rub the hot grill with the cut side of 1/2 of a large raw potato. The starches from the potato adhere to the grill and keep the fish from sticking. |

When sautéing fish, start with the skin-side up. This keeps the fish moist, even if you happen to overcook it a little. |
