SESAME OYSTERS (serves 2)

Ingredients:

1-pint small or medium oysters, 1-cup Panko bread crumbs, 1-cup sesame seeds, 1-Tablespoon fresh limejuice, 1-eggwhite, 1/4-cup white vermouth or Sake (rice wine)  

Directions:                                   

Combine sesame seeds with Panko breadcrumbs. Mix well and set aside.  In a large bowl, mix white vermouth, lime juice and egg white. Pour over oysters and allow to marinate briefly for 3 to 5 minutes.

Drain. Gently press oysters - one at a time - into the bread crumb & sesame seed mixture until well coated. Allow the coated oysters to sit for 2 to 3 minutes before cooking.

Sauté at medium heat in butter or canola oil until golden brown. DO NOT USE MARGARINE!

Panko breading can be found in the specialty section of your grocery store.
