Copper River King Salmon

Copper River King salmon is a rich-flavored fish with a firm texture that is perfect for grilling and baking. It can also be sauted, broiled, or poached. Due to its wonderful flavor, little additional seasoning is needed. Copper River King salmon season begins in mid-May and continues through mid-June. This short season combined with the quality of the fish means demand is high. King salmon is also known as Chinook salmon and spends five years or more in the ocean before returning to spawn. The average weight is around 20 pounds each, and King salmon can reach sizes of up to 60 pounds or more.

Copper River Sockeye Salmon

Sockeye provides the highest amount of omega-3 fatty acids (which doctors say are good for the heart) of any fish - 2.7 grams per 100 gram portion, and Copper River Sockeye is no exception. It has a firm, moist, flavorful flesh that is a favorite for broiling or grilling. It is also perfect for baking, sauteing or poaching, and many Copper River Sockeye are smoked and canned. Sockeye is the most abundant Copper River salmon species. The run begins in mid-May, and continues through late June. This fish, also known as Red salmon for the intense red color of its flesh, ranges in size from three to eight pounds.

Copper River Coho Salmon

Copper River Coho or Silver salmon is caught in late summer and early fall and doesn't enjoy the same amount of attention as the first runs of King and Sockeye. However, this is a wonderful fish with a mild flavor, making it perfect for grilling or baking. The milder flavor, which comes from the lower oil content of this fish, makes Coho a perfect salmon for those who do not eat a lot of fish. Coho salmon average around 10 pounds and can grow to be 18 pounds or more.
