Seafood Steward's Grilled
Albacore Tuna w/Sweet Tomato Pesto (serves
4)
Ingredients
1&1/2 to 2-pounds Albacore tuna loin
(boneless, skinless, cut into
4 equal servings), 3/4-cup pine nuts, 1/2-cup olive
oil, 3-cups tomatoes (vine ripe, blanched,
peeled & seeded), 6 large garlic
cloves, 1/2-cup parsley (chopped), 1&1/2-cups parmesan cheese, 1-cup
fresh basil leaves (firmly packed), 1/4-cup butter, 1 small lime (juice
only)
Directions:
Over medium heat, use 1/4-cup olive oil
to saute pine nuts until golden
brown. Take care not to scorch
them, then allow to cool. When pine nuts
have cooled, combine remaining ingredients in food processor and blend until
smooth.
Baste tuna loin and place on hot
grill. turn once and continue to baste with tomato
pesto. I enjoy Albacore when prepared medium to
medium rare. For a one-inch thick steak, this
requires 2&1/2 to 3&1/2 minutes of cooking time
per side.
